📖 Abstract: Diets high in ultra-processed food (UPF) have been linked with weight gain and risk of overweight, obesity, diabetes, and cardiovascular diseases. We aimed to investigate the associations between UPF consumption and the metabolome and their role in overweight and obesity risk, in early childhood and adolescence in a large British Cohort. In middle childhood a diet with a higher proportion of UPF was negatively associated with docosahexaenoic acid (DHA) and omega-3 fatty acids (generally considered biomarkers of fish consumption), tyrosine and branched-chain amino acids (BCAAs) (leucine, valine and isoleucine) as well as small, medium and large high-density lipoproteins(HDL). Additionally, the results showed that citrate, small, medium and large very-low-density lipoproteins(VLDL) were positively associated with UPF consumption. At adolescence, UPF consumption was negatively associated with small, medium and large HDL. Additionally, diets with a higher proportion of UPF at the age of 13 years was negatively associated with DHA and omega-3 fatty acids, tyrosine, BCAAs leucine, valine and isoleucine, and large very-low-density lipoproteins(VLDL). The mediation analysis suggested that glycoproteins acetyls, alanine, glutamine, docosahexaenoic acid, and a variety of VLDL, LDL, and HDL mediate overweight/obesity in middle childhood and adolescence.
